My childhood was spent day dreaming, my head rolled back, eyes gazing out the window, mind wandering into a fantasy world. As a young boy my day dreams turned into doodles, covering my hands, arms and school books. I grew and the doodles turned into drawings which turned into giant, bright graffiti pieces.
Being a creative and expressive person with a touch of flamboyance, passionate about my work, I began to root myself into the world of food - baking and patisserie - and so Meraki was born.
In the past 7 years, I have worked in craft bakeries across bristol. I moved on to be a pastry chef at Rosette restaurants and hotels. During this period I took advanced courses in artisan baking and patisserie and trained at two michelin star establishments - L’enclume and Le Manoir aux Quat'Saisons.
Now I am based at Old Down Estate by Thornbury, catering for weddings and more, under the acclaimed and knowledgeable hand of Head Chef Chris Wick.
I now turn clients’ ideas into reality in the form of bakes, cakes and patisserie. I would love to turn yours into reality too. This is my Meraki.
